I can’t stop thinking about FOOD!!

December 16, 2009

What is some amazing about food??……food throught our times has been a staple for religion, its been an art form that has grown into the same class as beautiful painters and sculputors. It has defined social status for generations all around the world and also used as currency for many years. Food has Started relationships especially for me! haha. they might of only lasted six hours but theres no regrets there……its been there in key points in many of our memories…Birthday…Graduations…and also in significant romantic situations…my personal draw to it is broken down into many different catogories but some of the key points that draws me to it daily besides the fact that if I dont I cant BE! but its the power we get from taking 12 seperate ingredients or so and manipulating them in many different ways to put them together and make something beautiful that people will always remember…as cooks or chefs were conductors to our own symphonies in the kitchen were playing god. It allows us a great power to please people and make there nights rememberable and remarkable…and being a chef isn’t bad because it does allow me a nice little edge against most guys haha………. so experiment burn things..blow up things perfect things!! becasuse that how you get good. So the Rain is here…..cocoa time

December 7, 2009

I woke up this morning with a strong chill in the air and heard an uncommon sound mabye the kids outside were tossing balls against the wall or the gardner was weedwacking….then I listened closer it was the sound of rain and lots of rain and if your reading this and your not from southern california then this is a huge deal for us.Now what do you associate with rain?. Cuddling up watching a film or putting on some comfortable clothes to sit by the fire an talk to a special someone(an they might not be that special but its kinda fun) and for the rest of us we get the need to drink hot cocoa, I think it takes us back to the times when you couldnt wait for the cold, so your mother would heat up those watered down nestle packs and if you were lucky she would pull out the small marshmellows and melt them on top! oh man!!!…..so in honor of this weather Im going to share with you my personal homeade recipe for making hot chocolate or aka hot cocoa so you won’t be brough to drink those watered down excuses for orignal and amazing hot cocoa.

1/2 c. cocoa
1 c. sugar
1 tsp. vanilla
3 c. water
1/2 gallon milk
Marshmallows (optional)

In a 10-quart kettle combine cocoa, sugar, and water. Stir until heated (slow boil); add milk. Heat until steaming. Add the vanilla just before serving. Top with whipping cream or marshmallows. Serves 10-12.
Now enjoy. Weatherman says its gonna be like this all week so pull out those films we all grew up enjoying in the holidays and drink and enjoy the clip I added at the bottom of the blog! one of my personal #1 christmas songs!

Breakfast for dinner…..yeah!

December 6, 2009

So its 9pm and now its time for a late late dinner….looking through the fridge hmm There’s eggs, potatoes  some porterhouse from lunch that was cooked to perfection and some asparagus…alrite what to make what to make …..well theres is the fixins to make an awsome steak dinner….but I want  something more so next choice is the best thing use the eggs and make breakfast for dinner a friend of mine does it once a week with there family an they call it high cholesterol tuesday. So I heat the pan coat it with oil….mix 3  eggs and add about an ounce of milk per egg and the proccess of adding milk its produces a fluffier and creamier texture to them when your scrambling or in this case using the eggs for an omellete. Now the pan is ready and the eggs are mixed….oh dang forgot the chop the ingredients ha. So I turn down the heat chop up the asparagus and the steak and cut the red potatoes into home fries style. So now were ready! turn the heat back up and add a little more oil and wait for the heated pan, now pour in the egss and spread the egss now with a spatula tilt the pan and push the egs towards the center to make sure the loose yolks and whites are cooked. Then added the asparagus potatoes and the steaks on the left side of the pan an found some chedder cheese and topped it. Now the hard part! dun dun dun…..scrape the edges up on the side the trick is to fast fold in half. Now next… let it cook for a moment. So now the next tough part dun dun dun.I took it off the burner put a plate on top of the egg and 1…2…3!! FLippped it and put it on the plate. Now I look at it and oh man golded with  a perfect tint of brown and a little pepper on top for the color. Made some toast and cut it in half and the aromas from the steak and the asparagus with the cheese and potatoes marinating together was amazing…got some juice made some toast and enjoyed my breakfast for dinner.

homemade applesauce

How to Make Homemade Applesauce

When you see how easy it is to make your own applesauce at home, you’ll never buy it from the store again. There are very few ingredients and very few steps, and you’ll have a wonderfully seasoned, wonderfully yummy side dish that only slightly resembles the stuff on the grocery store shelves.
The most important ingredient in making homemade applesauce is patience. Apples are a close second.

Seriously. Patience is key. Applesauce needs to cook for a long time, so walk away from it. Aside from stirring it now and then, just leave it alone.

Ingredients for homemade applesauce
Apples.
10 pounds of apples will yield about 6-7 cups of applesauce. Don’t feel like you have to make that much, though. 5 pounds will yield 3-3.5 cups of applesauce, about the same amount as a large jar you’d buy in the store.
Look for sweet apples (like Fuji), not tart ones (stay away from the Granny Smiths).
Some people say that applesauce is better when made from a mixture of different kinds of apples. I use whatever apples I have in the house.
Sugar
Cinnamon or apple pie spice or pumpkin pie spice
Water, if cooking on the stove
How to prepare your homemade applesauce
First, wash and cut your apples. (If you are going to peel them, this would be the time. I leave the peels on because they’re good for you.) I use an apple wedger for this step. It removes the core and slices the apples into eight wedges, all with one smooth motion. Discard the cores.

Put all of the apple slices into your Crockpot, cover them, turn it on low, and walk away for 6 hours. (You could also do this in a large stockpot on the stove. In that case, you’ll want to use Medium-Low heat, put an inch or two of water in the bottom, and stir it every fifteen to twenty minutes. The result is the same, but it will cook faster than in the Crockpot and there’s a risk of scorching. Be careful if you go this route.) Any recipe that says you can cook homemade applesauce for an hour or two is lying. It takes many hours.

Once the apples begin to soften, add sugar and cinnamon to taste. I add sugar 1/4 cup at a time and cinnamon 1 teaspoon at a time, and do lots of tasting. There aren’t hard and fast amounts here because different apples will need more or less sweetening, and different people like their applesauce more or less sweet. That’s the beauty of making it yourself!

After seasoning the applesauce, let it cook another 1 to 2 hours in the Crockpot or another 30 minutes to an hour on the stove. This allows the flavors to blend together.

If you want a smoother consistency, you can puree the applesauce in a blender or run it through a food mill or grinder. Since I leave the peels on the apples, I process the cooked applesauce through my KitchenAid stand mixer’s Food Grinder attachment. The peels get broken up, but not discarded, and it comes out just the way my family likes it.

If your applesauce gets too thick, you can thin it down with apple juice or water. I use 100% apple juice with no sugar added when this happens

Starbuckcooking background

December 5, 2009

Well,
Why do I cook? What draws me towards it?……My mom wasn’t around much when I was young and I always had a draw towards which I didn’t understnad it If it was making mashed potatoes or cookin an egg just rite, ruining pancakes or making dinner for the family and after a while I found girls liked it which I enjoyed as wellI enjoyed and also I thought it was just because I was always hungry! and thats still part of it. Then I was offered a job at a small fine dining bistro downtown. Where I found about the exciting parts of food an really why I really wanted to make this a large part of my life. I was amazed by the hard work that it took to create on small dish and how and the meticolous you had to be to create it, the discipline the blood and the sweat that these chefs were putting into this. I worked in large hotels…ran my own small catering business worked around the United States and also ran a large Catering business in southern California and am currenttly puersuing a career in food writting. I will walk lot though how I take simple ingredients lots of peple keep in there cupboards and make meals look great and taste great and that there friends an possible dates(if some are lucky to get one) will be impressed by. am a huge fan of great intense and amzin food.I am creating a twitter and a few other ways to follow, so follow along I’ll keep you entertained and teach you about this great art and hopefully you get a better knowlegde of the culinary arts an do some exploring yourself. A cook is creative, marrying ingredients in the way a poet marries words and cook in health an always wear clothes when cooking.

tryptophen

tryptophen

starbuckcooking
November 17th, 22:52 So…the holiday is here family shows up….theres large amounts of cranberry port reductions with drippings from the turkey made into a thickened sauce from roux and golden crisp skin on the Turkey that we all do adore….paired with yamm concotions aka sweet potatoes mashed smashed marshmallows jello with floating fruits and sage garlic mashed potatoes and the wine..yes lots of wine and of course pumpkin pie with whip cream on it, that we inhale after 10 min prior we swore that the there was no more room possibly in our stomachs and then we pass out watching football and all the people swearing that the reason there so so so tired is because of the the tryptophen in it! well it can’t be because you just gorged your self four times the amount that you do on any other day of the year that causes the lethargy…….trypophen is an amino acid. Everything from turkey to tofu, and dairy products to nuts — as well as virtually all meats — contain about 20 amino acids. One of these amino acids is tryptophan. There’s nothing unique about turkey and its tryptophan content. It contains about as much as other meats. So, if there were a direct sleepy effect, we’d feel it with all protein. Once tryptophan enters the body, it becomes the building block — or precursor molecule — of serotonin and melatonin. These are two brain compounds involved in regulating mood and sleep, but the amount that you intake when eating your turkey could not add up in an way enough to make you sleepy. Now how much tryptophen is needed to make you tired? well you would need to eat about 40 lbs of turkey for the tryptophen to really put you on your ass……not saying Im myth busters but just filling you in and letting you all know that this is just an urban myth.So now that I just dropped some science on you feel free to use it at the table this Thanksgiving. All enjoy your holiday thank God for your friends and family that you are able to share this with.

4 rules for dinner on first date

December 5, 2009

So cologne is on but not too much and you get in the car make sure you play something like a upbeat 80′s rock song no 2short or Marilyn manson it will prob put you in the wrong mood so you ge there and you pick her up now remember to open her door…..but if she doesnt reach and unlock your door “you dump her and you dump her fast” man bronx tale was an awsome flick, (if you dont get it you should check your manhood)then cancel the fancy restrauraunt and alberto’s it is, But if it all goes well you get to dinner on time and sit down. Throw a compliment her way and not at anytime spend more time staring at the hot waitress or bartender with the low cut top than your date(not saying dont look, Im saying dont get caught) because the whole point is to get another date here and treat your waitstaff well no one wants to be on a date with a jerk.So step 1. You will be ordering wine with this dinner so you remember the golden rule of ordering wine for the new wine conneseur or the guy needing to impress his girl… red wine with red meats such as beef and white wine will be paired with your lighter meats such as chicken and fish now this rule doesnt apply in all situations but if you stick with that you’ll be fine for this dinner. Now step 2. Order an appetizer something you can share, this will start the pallet off and anytime you can feed a girl at dinner something it sends you in the right directions, now I reccomend nothing that needs dipping because that means getting messy. Stick with small bite sized apps such as a shrimp stuffed mushrooms or artesian pizzas which are easy to share and not too filling and pay attention if you already ordered that wine as the more you pair your meal the better it will taste. Step 3 is extremely important because this is the main course(remember step 1 if now ordering the wine). Now no need to order the most pricey item on the menu no one is really impressed by it,and woman men do like to see a girl who eats. some great ideas are meals you can share such as tapas or going for sushi, but if ordering seperatly get what you want and enjoy! some great ideas are a Steak or the fish of the day, now most great restauraunt do get there fish shipment daily but if your going to stay away from it, it would be monday and while on the fish topic by no means order the deep fried fish special theres a reason why there masking it. step 4 now comes the dessert time to order men dont skip on this, woman enjoy dessert and chocolate is an aphrodiciac hint hint!!!…go ahead and order we as men tend to not want to eat dessert well MEN woman do!!! so sack up and share that dessert because the last thing you want to do is make her feel like a FAT ASS on a date once again hint hint. I recomend a sorbet that compliments your fish with the acidity or key lime pie with with chocolate ribbons with your new york steak. Now for a few quick etiquiete rules if the fork is dirty send it back dont use your napking, dont talk to loud and one I learned the hard way don’t drink too much at dinner and tip always tip generosity is a good quality. Now exit the restauraunt always opening doors for her and helping her off curbs and for the heck of it do sonnys door test one more time and for you men who still dont know that test is I put a small clip for you down below…. So eat good food drink great wine and GOOD LUCK!
